Deviled eggs are a classic appetizer here in the Midwest.  I make a big batch almost every week because they’re perfect to take along to any gathering and when made with fresh ingredients they’re actually very healthy!  We have a ton of chickens, so fresh eggs abound and I’m always looking for ways to use them – making deviled eggs is the perfect way to do so.

Traditional deviled eggs are delicious, but these spicy deviled eggs with bacon are one of our all-time favorite appetizers – a delicious, fun twist on a classic recipe.  They have the perfect amount of heat and make a great party appetizer.

INGREDIENTS

  • 6 whole eggs
  • 1/4 cup mayonnaise (check out my homemade mayo recipe which is perfect for making deviled eggs!)
  • 1/8 teaspoon salt
  • 1/8 teaspoon smoked paprika
  • 1/8 teaspoon chipotle powder
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon crushed red pepper flakes
  • 1-2 tablespoons bacon bits
  • chopped jalapeno peppers (optional)

TOOLS

  • sharp knife
  • small bowl
  • fork or hand mixer

Step-By-Step Instructions for Spicy Deviled Eggs with Bacon

HARD BOIL THE EGGS

Fill a small pot halfway with water and, a half teaspoon of salt or baking soda (this will make peeling the eggs easier), and the eggs.  Turn on high heat and bring to a boil.  Boil the eggs for 5 minutes. Then turn the heat off and allow the eggs to rest in the hot water for another five minutes.  Then place eggs into an ice bath (ice + cold water in a large bowl) for five minutes.

After the hard-boiled eggs have chilled in the ice bath for 5 minutes, peel and rinse them.

MAKE THE DEVILED EGG YOLK FILLING

Use a clean, sharp knife to cut the eggs in half and place the yolks in a small bowl.  Rinse the egg whites and set them aside to dry.

Use a fork or a pestle to mash the egg yolks, then add the mayo and all of the spices.  Use a fork, whisk, or hand mixer to combine.  If you want a very smooth filling, a hand mixer works best.

Use a spoon or piping bag to fill the white halves with the yolk mixture, then sprinkle the bacon bits over top of the eggs and serve or store in the fridge.
