Marshmallows are delicious. However, store-bought marshmallows are far from healthy. Believe it or not, fluffy marshmallows are actually incredibly easy to make at home. There are several ways to make them, but this marshmallow recipe is quick, easy, nutritious & protein-rich!

These marshmallows are made with lots of egg whites & bovine gelatin which makes them high in protein and guilt-free! You can sweeten them with either maple syrup or powdered sugar. I typically use maple syrup which also makes them mineral-rich.

- 6 egg whites
- 1/3 cup water

- 1 t vanilla extract
- 1/2 t salt

How to Make Healthy Homemade Marshmallows
- Beat 6 egg whites to soft peaks using a stand mixer or with a hand mixer. Start medium speed and then turn up to high speed. This may take several minutes.
- Heat water in a small pot on medium heat, whisk gelatin into hot water until dissolved, then whisk in powdered sugar, then salt. Bring the hot sugar syrup to a boil and then remove from heat, allow the mixture to cool a little bit, and add vanilla bean extract.
- Slowly pour the gelatin sugar mixture mixture into the bowl of the stand mixer with the stiff egg whites and continue to beat for 30-60 seconds until light and fluffy stopping to scrap the side of the bowl with a spatula to make sure there are no lumps in the marshmallow mixture.
- Pour the homemade marshmallow fluff into an 8×8 inch prepared pan, spread evenly with a spatula, and refrigerate covered for at least 4 hours until set.
- Once the marshmallows have set, cut and serve. Homemade marshmallows do not store well at room temperature. Store them in the fridge in an airtight container for up to a week.
Step-by-Step Instructions for Healthy Marshmallows
Separate egg yolks and whites. I use an egg yolk every morning in my Egg Yolk Coffee, and add one of these marshmallows too – so saving the egg whites to make homemade marshmallows works out well. This is my absolute favorite way to use homemade marshmallows
Beat 6 egg whites to soft peaks using a stand mixer or hand mixer. I prefer a stand mixer because I can prepare the gelatin mixture while the mixer beats the egg whites, which takes a few minutes. Set aside.
Add 1/3 cup of water to a small saucepan and heat on medium.
Whisk in 2 scoops/tablespoons of gelatin powder until dissolved – I use Perfect Supplements Grass-Fed Bovine Gelatin (use code HOPEWELLHEIGHTS10 for 10% off)
Add powdered sugar and salt, bring to a boil, and then remove from heat and whisk in vanilla.
Slowly pour the gelatin mixture into the stiff peaks egg whites while beating on high for 30-60 seconds until the marshmallow fluff is smooth & fluffy
Pour the marshmallow fluff into an 8×8 inch prepared pan and spread evenly with a spatula. Then refrigerate for several hours or overnight until the marshmallows have set completely/gelled. Cut the marshmallows to size & serve or refrigerate in an airtight container until ready to use.
FAQ
Can I use regular gelatin from the store?
Yes! You can use any gelatin. But if you want these marshmallows to be healthy, then use quality, bovine gelatin.
Can you taste maple syrup?
If you use maple syrup to sweeten your marshmallows rather than powdered sugar, there will be a slight maple flavor.
Is it ok to use raw eggs?
It depends on where the eggs come from. I use my eggs from right here on our farm, so I know they come from healthy hens and I wash them myself before cracking and using them. I don’t worry at all and I make quite a few recipes with raw eggs. If you don’t have access to quality eggs, just use good judgment.
Can I use the marshmallow fluff in recipes before it sets?
I haven’t tried but since the texture isn’t the same as storebought marshmallow fluff, I wouldn’t count on getting the same results.
Tips
Try some variations. Add a tablespoon or two of cocoa powder to the gelatin sugar mixture to make chocolate marshmallows. Add pumpkin spice to the gelatin mixture for Pumpkin Spice Marshmallows. Add beet powder for pink marshmallows for Valentine’s Day.
Let them set overnight. Mix up the marshmallow fluff, pour it into a pan, and let it set in the fridge overnight so the marshmallows are ready to go in the morning.
