Ingredients

  • 6 whole eggs
  • ¼ cup mayonnaise check out my homemade mayo recipe which is perfect for making deviled eggs!
  • ? teaspoon salt
  • ? teaspoon smoked paprika
  • ? teaspoon chipotle powder
  • ? teaspoon chili powder
  • ? teaspoon crushed red pepper flakes
  • 1 - 2 tablespoons bacon bits
  • Chopped jalapeno peppers optional

Instructions

Hard Boil Eggs

  • Fill a small pot halfway with water and, a half teaspoon of salt or baking soda (this will make peeling the eggs easier), and the eggs.  Turn on high heat and bring to a boil.  Boil the eggs for 5 minutes. Then turn the heat off and allow the eggs to rest in the hot water for another five minutes.  Then place eggs into an ice bath (ice + cold water in a large bowl) for five minutes.
  • After the hard-boiled eggs have chilled in the ice bath for 5 minutes, peel and rinse them.

Make Filling

  • Use a clean, sharp knife to cut the eggs in half and place the yolks in a small bowl.  Rinse the egg whites and set them aside to dry.
  • Use a fork or a pestle to mash the egg yolks, then add the mayo and all of the spices.  Use a fork, whisk, or hand mixer to combine.  If you want a very smooth filling, a hand mixer works best.
  • Use a spoon or piping bag to fill the white halves with the yolk mixture, then sprinkle the bacon bits over top of the eggs and serve or store in the fridge.

Notes

  1. Properly cook and chill the eggs: Follow the instructions for hard-boiling the eggs and ensure they are fully cooked before chilling them in an ice bath. This will make peeling easier and prevent overcooking.
  2. Mash the yolks thoroughly: To achieve a smooth and creamy filling, mash the egg yolks thoroughly before adding the mayonnaise and spices. Use a fork, whisk, or hand mixer for best results.
  3. Experiment with garnishes: While bacon is a classic topping for deviled eggs, feel free to get creative with additional garnishes such as chopped jalapeno peppers, cilantro, or green onions for extra flavor and visual appeal.
  4. Chill before serving: For the best flavor and texture, chill the deviled eggs in the refrigerator for at least an hour before serving. This allows the flavors to meld together and enhances the overall taste of the dish.

Storage

Spicy deviled eggs with bacon should be stored in an airtight container in the refrigerator. They can be stored for up to 3-4 days. Make sure to place them on a flat surface to prevent them from tipping over and spilling the filling.
Deviled eggs do not freeze well due to the creamy texture of the filling. Freezing can cause the texture to become grainy and unpleasant. It's best to consume them fresh or store them in the refrigerator for short-term storage.
