Ingredients

Batter

  • 1 cup all-purpose flour
  • ? cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 cup sourdough starter
  • 2 fresh apples peeled, cored, and diced (honeycrisp, gala, or granny smith apples for tart flavors)
  • Coconut oil, lard, or tallow for frying

Maple Glaze

  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Heat 1.5 inches of oil or fat to 375°F in a Dutch oven, cast-iron skillet, or deep fryer while making the batter. 
  • Add the dry ingredients to a mixing bowl and whisk to combine.  Next, add the milk and eggs, then stir to combine.  Don’t overmix.  Fold in the chopped apples.
  • Drop 1/3 cup of batter into the hot oil at a time, using a fork or slotted spoon to space the fritters out.  Fry for 2-3 minutes on each side until golden brown, then remove with a slotted spoon and place on paper towels or a wire rack over parchment paper to cool.
  • Make the maple glaze.  Whisk together powdered sugar, milk, maple syrup, and vanilla extract in a small bowl.  Drizzle the maple glaze over the apple fritters, allow them to set for 10 minutes, then serve warm.
