Batter
- 1 cup all-purpose flour
- ? cup sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 eggs
- 1 cup sourdough starter
- 2 fresh apples peeled, cored, and diced (honeycrisp, gala, or granny smith apples for tart flavors)
- Coconut oil, lard, or tallow for frying
Maple Glaze
- 2 cups powdered sugar
- 2 tablespoons milk
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
Heat 1.5 inches of oil or fat to 375°F in a Dutch oven, cast-iron skillet, or deep fryer while making the batter.
Add the dry ingredients to a mixing bowl and whisk to combine. Next, add the milk and eggs, then stir to combine. Don’t overmix. Fold in the chopped apples.
Drop 1/3 cup of batter into the hot oil at a time, using a fork or slotted spoon to space the fritters out. Fry for 2-3 minutes on each side until golden brown, then remove with a slotted spoon and place on paper towels or a wire rack over parchment paper to cool.
Make the maple glaze. Whisk together powdered sugar, milk, maple syrup, and vanilla extract in a small bowl. Drizzle the maple glaze over the apple fritters, allow them to set for 10 minutes, then serve warm.
