Fluffy Egg White Beef Gelatin Marshmallow Recipe

Ingredients

  • 6 egg whites
  • 1/4 cup water
  • 22 grams or 2 tablespoons grass fed beef gelatin powder
  • 1/3 cup water
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  • Beat 6 egg whites to soft peaks using a stand mixer or with a hand mixer. Start medium speed and then turn up to high speed.  This may take several minutes.
  • In a small bowl, sprinkle gelatin powder over 1/4 cup cold water, set aside so gelatin blooms
  • Heat 1/3 cup water in a small pot on medium heat, then whisk in powdered sugar and salt. Bring the hot sugar syrup to a boil and then remove from heat, allow the mixture to cool a little bit, then whisk in the bloomed gelatin and vanilla extract.
  • Slowly pour the gelatin and sugar mixture into the bowl of the stand mixer with the stiff egg whites and continue to beat for 1-2 minutes until light and fluffy, stopping to scrape the side of the bowl with a spatula to make sure there are no lumps in the marshmallow mixture.
  • Pour the homemade marshmallow fluff into a 8x8 prepared pan, spread evenly with a spatula, and refrigerate covered for at least 4 hours until set.
  • Once the marshmallows have set, cut and serve. Egg whites marshmallows do not store well at room temperature.  Store them in the fridge in an airtight container for up to a week.

Notes

Try some variations.  

Add a tablespoon or two of cocoa powder to the gelatin sugar mixture to make chocolate marshmallows.  Add pumpkin spice to the gelatin mixture for Pumpkin Spice Marshmallows.  Add beet powder for pink marshmallows for Valentine's Day.

Let them set overnight.  

Mix up the marshmallow fluff, pour it into a pan, and let it set in the fridge overnight so the marshmallows are ready to go in the morning.
