- 5 lb tomatoes paste tomatoes like Roma are best
- 2 onions finely diced
- 2 jalapenos minced (remove seeds for mild salsa)
- 6 cloves garlic finely minced
- ½ cup fresh cilantro finely chopped
- ½ cup fresh lime juice about 6 limes
- 2 teaspoons salt use quality non-iodized salt for canning
- 1 teaspoon black pepper
Add all ingredients to a large dutch oven, and stir to combine.
Bring to a simmer for 15-20 minutes.
Serve, refrigerate or prepare for canning.
