Ingredients

  • 5 lb tomatoes paste tomatoes like Roma are best
  • 2 onions finely diced
  • 2 jalapenos minced (remove seeds for mild salsa)
  • 6 cloves garlic finely minced
  • ½ cup fresh cilantro finely chopped
  • ½ cup fresh lime juice about 6 limes
  • 2 teaspoons salt use quality non-iodized salt for canning
  • 1 teaspoon black pepper

Instructions

  • Add all ingredients to a large dutch oven, and stir to combine.
  • Bring to a simmer for 15-20 minutes.
  • Serve, refrigerate or prepare for canning.
